Lazy Daisy Oatmeal Cake

My mama got this recipe from the Quaker Oats box. She made this wonderful cake every Christmas and whenever we could talk her into it throughout the year. It must have been economical to make because she made it fairly often. I'm sure she used margarine instead of butter, and canned milk instead of Half and Half. And though I'm sure it would be even better with real butter and Half and Half, we always loved Mama's version. It remains one of my favorite childhood memories.

1 ¼ cups boiling water
1 cup uncooked Old-Fashioned Quaker Oats,
½ cup butter or margarine, softened
1 cup sugar
1 cup firmly packed brown sugar
1tsp vanilla
2 eggs
1 ½ cup sifted all-purpose flour
1 tsp soda
½ tsp salt
¾ tsp cinnamon
¼ tsp nutmeg

Preheat oven to 350 degrees. Grease and flour a 9-inch square baking pan. Pour boiling water over oats and stir. Cover, let stand 20 minutes. Beat butter until creamy, gradually adding sugars. Beat until fluffy. Blend in vanilla and eggs. Add oatmeal mixture and blend well. Sift together flour, soda, salt, and spices. Add to the creamed mixture and blend well. Pour batter into prepared pan. Bake 50 to 55 minutes. Leave cake in the pan to frost.

Frosting

½ c butter or margarine
½ cup firmly packed brown sugar,
3 T Half and Half
½ cup chopped nuts
¾ cup flaked or shredded coconut

Combine all ingredients. Spread evenly over cake. Broil until frosting becomes bubbly. (This smells wonderful, but don't let it burn!) Serve warm or cool.
