Darlene's Carrot Bars

4 eggs
3 cups shredded carrots
1 ½ cup oil
1 ½ cup chopped nuts
2 cups flour
|
1 tsp vanilla
2 cups sugar
2 tsp soda
1 tsp salt
3 tsp cinnamon
|
Preheat oven to 350 degrees. Sift dry
ingredients. Beat sugar and eggs together. Stir in carrots, vegetable oil,
and vanilla. Add dry ingredients and nuts. Mix well.
Pour into 11 x 15" jelly roll pan. Bake for 30-35 minutes or until
toothpick comes out clean. Cool on wire rack before frosting. Leave in
pan to frost.
Frosting
½
cup melted butter
8 ounces cream cheese
1 tsp vanilla
2 cups powdered sugar
Combine ingredients and mix well. Spread on cooled cake.
