Biscotti

Makin' a List...

This is my favorite biscotti—easy to make, a simple, delicious pleasure to eat. It also makes a great gift when tucked into large mugs with envelopes of gourmet instant cocoas and coffees.

½ cup vegetable oil
1 cup sucanat or brown sugar
3 ¼ cups all-purpose flour
3 eggs
1 T baking powder
1 T vanilla
1 cup chopped walnuts

Preheat oven to 375°. Grease cookie sheets. Beat oil, eggs, sugar and vanilla until well blended. Sift together flour and baking powder. Combine flour mixture with liquid mixture. Divide dough into two piecs. Form each piece into a roll as long as cookie sheet. Place roll onto cookie sheet and press down to ½ inch thickness.

Bake for 25 to 30 minutes until golden brown. Remove from cookie sheet and cool on wire rack. When cool enough to handle, slice crosswise into ½ inch slices. Place slices cut side up onto cookie sheet. Bake for 6 to 10 minutes on each side. Slices should be lightly toasted.
